Latest progress on Vidanta SkyDream - according to the post, phase one of Vidanta World will be finished in 2021 (which depending on what phase one means is in the realm of possibility but unlikely) and all three phases will be completed by 2023.

Concept design for what will potentially be part of a future phase of Vidanta Nuevo Vallarta's "The Parks" - this "Vidanta Senses Park" would be a separate park from the first phase Vidanta World park. Instead of focusing on rides, Vidanta Senses Park would feature gardens plus recreational actives such as hiking trails, farm animal interactions, zip lines, and ropes and obstacle courses. The theme of Vidanta Senses Park would be nature and agriculture. Some rides may be present in the park based on the concepts, including a junior coaster and carousel. This park would be located east of Vidanta World and connected to the rest of Vidanta Nuevo Vallarta by boat, road, and Vidanta SkyDream gondola system.

It appears that the two attractions vertical at the theme park so far are the structure for the tethered helium balloon ride and the Cirque du Soleil theater. Also it seems that some if not all of the onsite resorts have topped off (I think I'm seeing less cranes).
