I believe it's just two. The area labeled 1/2 are really just one theatre and 3 with the unlabelled area below it is the other.

Soarin’ will have 3 Theaters (like Florida; unlike Shanghai & California). The queue layout however seems very similar to the Shanghai version, much larger than Florida’s or California’s.
