Also I spy at least three Yoshis that can be seen along the Yoshi ride not counting the green one that is seen walking and not counting of course the ride vehicles themselves.

I highly encourage you to watch this YouTube video (fast forward to 49 seconds) because not only does it show the coins spinning, and not only does it show the green shell spinning while moving back and forth (and at a much better angle), but it for the first time also shows a Piranha Plant moving - all of which is happening simultaneously!
