One Day at Disney on Disney+ has a new episode (Episode 33) where you can see inside the construction of Ratatouille at EPCOT. The filming is probably dated around May 2019 but it's the first time we have seen inside the construction.
Another huge element of the ride is this projection screen. Although attractions such as Soarin’ Around the World utilize large-scale screens like this, it is rare we get to see them up-close and switched off like we do here. The screen is domed, and the attraction will enable the trackless vehicles to steer close to the projected action for a truly immersive experience

At the D23 Expo in August 2019, a video was shown that briefly included concept art of the replacements for Electric Umbrella and Mouse Gear (you can see it here starting at 4:21 https://www.youtube.com/watch?v=bbmA8A6UsYM) but I do not think Disney ever officially released the full, original concept art online...
Here's two images of the restaurant (I don't think the first concept art has ever been released before):
And here's the full concept art of the new main gift shop:

Disney has officially delayed the Spaceship Earth overhaul project. As we reported earlier this summer, Disney was defunding construction projects, a fact that they admitted when discussing a nearly $1 billion savings due to cut refurbishment and construction projects. As it turns out, our hunch was correct and Disney has CUT two significant projects from the EPCOT Experience video that previews upcoming projects for the park. As you can see in the video below from The Schmoofs YouTube channel, the Spaceship Earth AND Mary Poppins segments were cut from the video. The video only shows the transitions, but you can compare the segments to see the cuts. The removal of the segments likely hints at significant changes or a complete abandoning of the previously announced projects.
