Vidanta World's design is now confirmed to be by Hetzel Design. Their website contains some never before seen concept art and the following description of the project:

There’s magic and wonder brewing in Nayarit that might just bring about a revolution in entertainment. Already stunning, the high-end Vidanta resort in Nuevo Vallarta will double in capacity over the next three years. A world-class theme park, and an entertainment boardwalk featuring a major Cirque the Soleil attraction will anchor this new development. This new concept in family vacationing will fuse luxury with imagination, creating a fantastical world where adventures leap to life through immersive rides, attractions, and interactive performances. Highly thematic new resort hotels will surround and compliment the entertainment hub, so that every moment of the vacation experience is filled with magic and amazement.

Hetzel Design is also doing the design of the adjacent agriculture/nature park which they refer to as "Garden of Senses" or "The Land of Senses":

A true eco resort nestled between a river delta and multiple lakes just minutes away from the ocean, the Garden of Senses celebrates nature and lives in harmony with local vegetation and bird habitats.

A small entertainment village is a dispatch center for numerous adventures: boat dinner tours on the lake, zip lines, biking, hiking, tractor trailer farm rides and an immersive nighttime “Lumina” experience!

    Vidanta SkyDream is testing!

By winter 2020, the resort will open the aerial gondola to connect the entertainment parks to the beach. Billed as the first of its kind in Latin America, the gondola will have five stations on a four-plus-mile route. Guests will be able to choose between regular and glass-bottom cars as they soar over the resort.

Latest progress on Vidanta SkyDream - according to the post, phase one of Vidanta World will be finished in 2021 (which depending on what phase one means is in the realm of possibility but unlikely) and all three phases will be completed by 2023.

Concept design for what will potentially be part of a future phase of Vidanta Nuevo Vallarta's "The Parks" - this "Vidanta Senses Park" would be a separate park from the first phase Vidanta World park. Instead of focusing on rides, Vidanta Senses Park would feature gardens plus recreational actives such as hiking trails, farm animal interactions, zip lines, and ropes and obstacle courses. The theme of Vidanta Senses Park would be nature and agriculture. Some rides may be present in the park based on the concepts, including a junior coaster and carousel. This park would be located east of Vidanta World and connected to the rest of Vidanta Nuevo Vallarta by boat, road, and Vidanta SkyDream gondola system.

It appears that the two attractions vertical at the theme park so far are the structure for the tethered helium balloon ride and the Cirque du Soleil theater. Also it seems that some if not all of the onsite resorts have topped off (I think I'm seeing less cranes).
